Mother's Day gifts in the making...

(I realized after I labeled all the jars... that I
spelled Rhubarb WRONG...oops! Oh well, the Mom's won't care.)

Strawberry Rhubarb Jam

2 lbs. Rhubarb, diced
2 lb. strawberries, hulled and diced
6 cups sugar - ugh!
1 green apple grated
Juice of 1/2 lemon
Cover cut rhubarb with half of the sugar
and let stand 1 to 2 hours.
Crush strawberries & mix with remaining sugar
and combine with rhubarb. Place mixture
over low heat until sugar is dissolved,
then boil rapidly, once boiling stirring
frequently to prevent burning.
Cook until thick, approx. 15 min.
Pour hot mixture into clean jars,
this recipe made 6 (13oz.) jars,
turn upsidedown & cool completely.
