Happy

On another note....
The month of May was a total
whirl wind!  We had two graduation,
a 75th birthday party,
family visiting from out of town...,
 it was kinda crazy!! 
But a fun crazy for sure.
I have tons of great photos to
post, but need to go thru them all and
collect my thoughts a bit first....

Mother's Day gift

The man at the garden center said
they do great here in Arizona.

Garden patch

Logan picking radishes from our garden.
In our little garden patch this year...
3 kinds of tomatoes, mr. stripey (our favorite),
yellow pear, and red grape, dill, basil,
chives, oregano, beets,
radishes, carrots, tuscan kale,
along with some sunflowers
 and nasturtium (for the edible flowers)
The weather has been really nice,
so things are growing well.

Recipe to try

Pan seared salmon with
creamy leek sauce.
Doesn't this look delicious!
Plan to make asap.
Recipe here.

Pan Seared Salmon
with Creamy Leeks
•2 x 160-180 gram fillets of salmon
•Olive oil
•6-5 leeks, white and light green parts only,
sliced diagonally (about 2 cups sliced)
•1 tablespoon chopped fresh dill
•1/4 cup cream
•Squeeze of lemon juice
•Sea salt and freshly cracked black pepper

Heat a swirl of olive oil in a pan.
When the oil is hot add the leeks and sauté
 until they start to soften. Add the cream
 and let it bubble a bit until the leeks are tender,
 adding salt and pepper to taste.
Add the dill, toss, and take off the heat.
Add a squeeze of lemon juice and stir.
Taste and adjust seasoning. Set aside.
Pan sear or grill salmon,
top with creamy leeks.

** Made this Salmon, it was

Will be making this on a regular basis.
I did add a bit more cream,
and lemon juice.

New ride

Isn't it cute!
Every day when I drive home
from work, I pass this little
 bike shop with tons of colorful
beach cruisers all lined up outside.
A few weeks ago, I decided to stop and
put one on layaway.
I brought it home yesterday!
L O V E  I T !
The weather has been so beautiful!
It is just perfect for bike riding.

Best ever....

Tried a new chocolate chip cookie
recipe last night.
I normally make my cookies
with butter - this recipe called for
shortening... I gave them a try anyhoo.
Logan said it was
"the best chocolate cookie ever!"
Okay...so they must be good
coming from the cookie monster...?
I must say, they are good.

Best Chocolate Cookie Ever!
(according to my son)
~
1 c. sortening
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
1 1/4 tsp. baking soda,
 dissolved in 3 T. water
(not sure why it is done this way....
but I did it anyhoo)
3 c. flour
1 tsp. baking powder
1/4 tsp. salt
12 oz. pkg. chocolate chips
(I used a little less, a full bag 
seemed a bit excessive...)
~
Preheat over to 350.
Cream together shortening, sugars,
eggs and vanilla.
Add soda dissolved in water.
Blend in flour, baking powder and salt.
Add chocolate chips.
Drop by spoonfuls onto cookie sheet and
bake for 10 minutes.
Pour a big glass of cold milk and
enjoy some warm yummy cookies!

 Burlap table clothes and
sawdust on the ground
Menu:
Butternut squash,
 served in acorn squash bowls.
Arugula salad with roasted beets,
goat cheese.
Mushroom polenta.
Braised short ribs with red wine
reduction.
Roasted heirloom root vegetables.
