Loss

My sister-in-law Cathy's father
passed away this past week.
We attended his funeral services
on Friday.
He was a good man - a man's man,
a cowboy, strong, hard working,
and honest.

Dinner tonight

Making this Lasagna soup for dinner
tonight. Doesn't it look delish!
Got the recipe here.
It rained this morning and it's
wet and cold outside - well, cold
for us, 52 degrees. I'm happy that I have
the day off. Plan to spend most of it
snuggled on the couch with a cozy
blanket, watching movies.

Halloween 2011

We had a great Halloween, as always.

We got a late start on carving this year,
believe it or not, it was still hot until the sun
went down. It was dark by the time we
finished - crazy!

"Scary Larry"

So Logan and I decided to make a
scarecrow to keep the birds away.

We used some of Logan's old jeans

and an old shirt for the head

Logan made a face and we glued
on some buttons

Where did the week go?

It was a loooong, busy week, filled
with challenges on many levels.
Do you ever think you just might not make
it through? - it was one of those.
But here we are...on the other side.
Now...on to the next week...
On a lighter note - I re-potted
my herb pot - Rosemary, Thyme and Oregano.
Love to have them for cooking with
all winter long - soups, roasts, etc.
Planning a delicious pork roast for
dinner tonight.

Fall muffins

Made some delicious pumpkin strussel
muffins yesterday.



Pumpkin Strussel Muffins
2 cups flour
1/2 t. salt
1/2 t. baking powder
1 t. baking soda
1 t. cloves
1 t. cinnamon
1 t. nutmeg
2 cups sugar
(I know, this is alot....)
3/4 cup butter
2 lrg. eggs
1 (15 oz.) can pumpkin puree

Mix together dry ingredients, set aside.
Cream butter and sugar, add eggs one
at a time, then pumpkin, mix till combined.
Add dry ingred.
I made this recipe as muffins, but you could
make as a loaf.
It made 18 muffins or one large loaf.
I filled the muffin cup half way, then added
a strussel topping and then added more
batter on top.
Strussel topping:
1 cup chopped pecans
1/4 cup melted butter
1/4 cup sugar
1/3 cup brown sugar
2 tsp. cinnamon

Bake at 350 for approx. 20 min.
Loaf will take longer... 45-50 min.
