Making this Lasagna soup for dinner tonight. Doesn't it look delish! Got the recipe here. It rained this morning and it's wet and cold outside - well, cold for us, 52 degrees. I'm happy that I have the day off. Plan to spend most of it snuggled on the couch with a cozy blanket, watching movies. ~ p.s. ~ soup was excellent!
Made some delicious pumpkin strussel muffins yesterday.
Pumpkin Strussel Muffins 2 cups flour 1/2 t. salt 1/2 t. baking powder 1 t. baking soda 1 t. cloves 1 t. cinnamon 1 t. nutmeg 2 cups sugar (I know, this is alot....) 3/4 cup butter 2 lrg. eggs 1 (15 oz.) can pumpkin puree
Mix together dry ingredients, set aside. Cream butter and sugar, add eggs one at a time, then pumpkin, mix till combined. Add dry ingred. I made this recipe as muffins, but you could make as a loaf. It made 18 muffins or one large loaf. I filled the muffin cup half way, then added a strussel topping and then added more batter on top. Strussel topping: 1 cup chopped pecans 1/4 cup melted butter 1/4 cup sugar 1/3 cup brown sugar 2 tsp. cinnamon
Bake at 350 for approx. 20 min. Loaf will take longer... 45-50 min. ~
