Pink grapefruit

Made this delicious
Pink Grapefruit
salad the other night.
Arugula, shaved fennel,
pink grapefruit, sliced avocado,
salt & pepper
Drizzled with a light vinaigrette
4 T. olive oil
2 T. white wine vinegar
1 t. Dijon mustard
salt & pepper
Yum!
(will definetly make again)

Cheesecake

Made strawberry cheesecakes
in a jar
for dessert tonight.

Strawberry Cheesecake
(2) 8 oz. packages cream cheese
2 eggs
1/2 cup sugar
1/2 tsp. lemon zest
1 T. lemon juice
1/2 tsp. vanilla
Crust:
3/4 sleeve graham crackers
1/3 cup granulated sugar
1/2 cup melted butter

Process graham crackers, sugar and butter.
Press into jars. Bake at 350 degrees for
about 10 min. Cool for about
10 min.
Whip together cream cheese, sugar, eggs,
vanilla, lemon juice, and zest.
Pour into jars.
Bake for about 20-25 min.
till almost set.
Cool for about 3 hrs. and
top with strawberries.
