Mix it all up and shape into balls. Slightly flatten the balls with your hand or the bottom of a glass. Bake at 350 for 8 minutes. Allow to cool for 1-2 minutes before removing to cool on a wire rack.
Cream Cheese Icing:
1-4oz. package cream cheese, softened
1/4 c. butter (1/2 a stick), softened
1 tsp. vanilla extract
1 1/4 c. powdered sugar
Mix it all together until nice and fluffy and creamy. Put it into a plastic bag and snip the end off. Pipe a large "blob" onto a cooled cookie. Place another cooled cookie on top and gently squish it.
Made these Key Lime Pie in a jar desserts for 4th of July. They turned out so cute - and delicious!
Can't take credit for the idea... got that here ~ Key Lime Pie Crust: 1 sleeve of graham crackers 5 Tbl. butter, melted 1/3 cup sugar 1/2 cup pecans Filling: 3 egg yolks 2 tsp. lime zest 1 (14oz.) can sweetened condensed milk 2/3 c. key lime juice ~ Process crackers & nuts in food processor, add sugar, then melted butter. Press a heaping spoonful into ea. jar. Bake till set and golden, approx. 8-10 min. Set aside to cool on a wire rack. Beat eggs & lime zest till light and fluffy. Gradually add condensed milk and beat till thick. On lower speed add lime juice and mix. Pour into jars. Bake at 350 for 10 min., then cool on wire rack. Cool in fridge for several hours before serving. *I topped with fresh whipped cream. Yummy!
Huge dust storm last night - or Haboob, yes, it has a name. I did not take this picture - we did not see it coming till the air was filled with dust. Tons of amazing photos on the Internet. Spent the past 2 hours this morning, cleaning up the pool and hosing down the entire patio and everything on it! Such a mess!
